Bread is a staple food prepared by cooking a dough of flour and water and possibly more ingredients. Doughs are usually baked, but in some cuisines breads are steamed, fried, or baked on an unoiled skillet. It may be leavened or unleavened. Salt, fat and leavening agents such as yeast and baking soda are common ingredients, though bread may contain other ingredients, such as milk, egg, sugar, spice, fruit, vegetables, nuts or seeds.

Indian Breads

In South Asia ( India, Pakistan, Middle East, etc.), Roti or Chapati, types of unleavened flat breads usually made from wholewheat flour and baked on a hot iron griddle called tava, form the mainstay of the peoples’ diet. Rotis and Naans are usually served with curry throughout the region. A variant called Makki di roti uses maize flour rather than white flour. Another variant is Puri, a thin flat bread which is fried rather than baked and puffs up while cooked. Paratha is another variation on Roti that is shallow fried or cooked using some oil, butter of ghee. Parathas are also stuffed with different fillings like potato, onion, vegetables, eggs etc. Naan ( leavened wholewheat bread ), however, is baked in a Tandoor or clay oven and is rarely prepared at home. Some other varities include – Bajre ki roti, Jau ki roti, Chawal ki roti.

Indian parathas are very high in calories/energy (high calories from fat) as these are fried in ghee or butter. Tandoori roti is baked in tandoor so these are supposed to be low in calories. But they are often coated with ghee or butter to improve their taste and that makes them high calorie, high fat food.

  • I want to know nutrition in medium sized wheat roti(without ghee /or butter) kindly let me know.As my Dil insist that we should take plain rice everynow and then.
